OSM Thome Recruitment is looking for experienced Sous Chef for unique career opportunities in the cruise industry, on behalf of Royal Caribbean Group.

The Sous Chef Manages and coordinates activities of various workstations engaged in preparing, timing, and cooking soups, meats, vegetables, desserts, including breads served in a variety of dinning venues onboard the ship. Responsibilities and Tasks:

  • Oversee Hot & Cold Galley operations, ensuring food quality, consistency, and presentation meet company standards.
  • Supervise and mentor a diverse team of culinary professionals, providing training and performance evaluations.
  • Manage food inventory, cost control, and provisioning to optimize efficiency while maintaining quality.
  • Ensure compliance with USPH, HACCP, and safety regulations, conducting regular inspections.
  • Collaborate with senior leadership, including the Executive Chef, F&B Director, and Inventory Manager, to enhance operational efficiency.
  • Develop and implement innovative recipes and food preparation techniques.
  • Maintain cleanliness and sanitation across all galley areas, ensuring proper use and maintenance of kitchen equipment.


Qualifications and competence:

  • Minimum 6-10 years of experience in high-end hotels, resorts, or cruise ships, with at least 3 years in a leadership role (Executive Sous Chef or Chef de Cuisine preferred).
  • Formal culinary school degree or equivalent apprenticeship.
  • Strong ability to manage, motivate, and train an international team in a fast-paced setting.
  • Knowledge of food safety protocols, recipe development, and high-volume kitchen operations.
  • Ability to work efficiently in a dynamic environment while maintaining exceptional service standards.
  • Excellent problem-solving and teamwork skills, with the ability to liaise with multiple departments.
  • Ability to speak, read, and write English clearly and effectively to give and receive instructions, interpret procedures, and interact professionally with guests, supervisors, and co-workers.
