OSM Thome Recruitment is looking for experienced Butcher to join our onboard Royal Caribbean Group.

Responsible for the preparation, handling, and storage of meats and poultry according to company standards and safety regulations. Working closely with the Head Butcher and Executive Chef, you will play an essential part in ensuring smooth galley operations and upholding the highest food quality and hygiene standards at sea.


Responsibilities and Tasks:

  • Prepare, thaw, and butcher meats and poultry according to scheduled production plans.
  • Follow direction from the Head Butcher and Executive Chef; participate in training as schedules may vary.
  • Assist with transporting food items to galley locations as needed.
  • Rotate stock using the FIFO (First In, First Out) method to ensure freshness and minimize waste.
  • Store all meat and poultry properly during loading days to maintain safety and quality.
  • Maintain a clean and sanitary work environment, following all USPH and company hygiene regulations.
  • Be present and prepared during early standbys for scheduled or surprise USPH inspections.
  • Participate in required trainings, safety briefings, meetings, and operational activities.
  • Respond professionally to guest and crew inquiries and maintain knowledge of shipboard protocols.
  • Support cost containment efforts by properly handling supplies, minimizing waste, and maintaining equipment.
  • Perform any other job-related duties as assigned by supervisors or management.


Qualifications and competence:

  • Minimum of three years’ experience as a Butcher in an upscale hotel, resort, cruise ship, or high-volume banquet setting (shipboard experience preferred).
  • Proficient in meat and poultry preparation, handling, and sanitation techniques.
  • Knowledge of safe cleaning methods and proper use of culinary equipment.
  • High school diploma or equivalent required.
  • Must be fluent in English with the ability to understand and follow both written and verbal instructions.
  • Strong communication skills and a professional demeanor in guest and crew interactions.
