OSM Thome Recruitment is seeking a skilled Baker to oversee the daily bakery operations onboard.
This role is responsible for producing high-quality bread and bakery items across multiple venues while maintaining consistency, hygiene, and presentation in line with corporate standards. The ideal candidate brings experience, leadership, and attention to detail in a fast-paced, multicultural environment.
Responsibilities and Tasks:
- Ensure the smooth and efficient operation of the bakery shop, including daily bread production, buffet setup, and display.
- Oversee the quality, taste, and presentation of all bakery items according to company standards.
- Direct, coach, supervise, support, and evaluate team members in coordination with the Head Baker.
- Prepare production forecasts, monitor usage, record leftovers, and implement waste-reduction strategies to maintain food cost targets.
- Maintain a complete understanding of and ensure compliance with all United States Public Health (USPH) regulations and sanitation procedures.
- Guarantee readiness of bakery areas for announced or unannounced public health inspections and implement daily cleaning schedules to minimize equipment wear.
- Requisition and coordinate the delivery and transport of necessary ingredients and supplies from main stores to the bakery shop.
- Ensure correct recipe usage, portion control, and adherence to the company’s master lists and yield guidelines.
- Complete daily bakery consumption recaps and production reports as required by the Executive Chef.
- Monitor punctuality, personal appearance, and hygiene of bakery staff, ensuring uniforms and grooming meet company standards, especially in guest-facing areas.
- Maintain thorough knowledge of timekeeping and scheduling procedures, including familiarity with crew contracts and weekly hour documentation.
- Attend required meetings, training activities, and all other work-related sessions onboard.
- Perform spot checks of workstations to verify correct storage, labeling, and stock rotation using FIFO methods.
- Identify opportunities to reduce expenses through cost-effective practices and operational efficiencies.
- Ensure proper handling and maintenance of all records, equipment, tools, and supplies in line with cost containment practices.
- Review team timesheets and forward them to the Executive Chef for approval; may also prepare reports and correspondence using onboard computer systems.
- Support shipboard operations, respond to guest or crew inquiries professionally, and perform additional duties as assigned by supervisors or management.
Qualifications and competence:
- Minimum of two years’ experience as a CDP Baker in an upscale hotel, resort, cruise ship, or high-volume banquet environment (shipboard experience preferred).
- Culinary degree or formal training from an accredited institution is required.
- Strong leadership and team management skills in a multicultural, high-energy workplace.
- Excellent communication, problem-solving, decision-making, and interpersonal abilities.
- Exceptional team-building and conflict-resolution skills.
- Comprehensive knowledge of food service processes, guest satisfaction techniques, and quality assurance standards.
- Capable of planning, organizing, coaching, staffing, and evaluating team performance.
- Intermediate computer literacy and reporting skills.
- Good understanding of basic accounting principles such as debits/credits, inventory flow, and cost adjustments.
- Fluent in spoken and written English, with the ability to interpret procedures, write reports, and communicate effectively with senior officers and corporate staff.
