Assisting to support a team of hardworking Culinary professionals in your section the CDP is responsible for assisting with the day to day food preparation and meal services activities, ensuring consistency, quality, cost effectiveness, and the highest level of sanitation are maintained, all in keeping with company and USPH standards.

Responsibilities and Tasks:- To assist in ensuring the smooth preparation and service to company standards of all food items aboard the ship, ensuring quality, consistency and maximum food cost efficiency throughout.
- To ensure all employees, under their charge, arrive on time to work, in a clean company specified uniforms and wearing safety equipment if required.
- Follow up on working schedules for all Employee galley culinary team.
- Assist in the scheduled and ongoing training of all galley employees.
- Monitor quality and specification of all items loaded onto ship to ensure company standards are adhered to. Report all discrepancies to the Sous Chef – Staff
- Monitor quality and presentation of all food items, provide corrective action where necessary.
- Provide training in all USPH AND HACCP procedures and ensure same is carried out on daily basis by all employees.
- Ensure that the team is familiar with the operation of the galley equipment and that the equipment and accessories, are adequately cleaned and maintained. Submit repair requests and follow up wherever necessary.
- Ensure temperature logs for all refrigeration is taken by department heads on a daily basis.
- Follow-up on the daily requisitions from all kitchen outlets.
- Ensure all requested paperwork is submitted accurately and on time to the chef.
- Liaise on a daily basis with the Sous Chef Staff chef regarding potential shortages and make changes where applicable.
- Liaise with kitchen management regarding any menu changes, guest feed back, etc.
- Be involved with the welfare of all kitchen personnel. Ensure kitchen personnel seeking medical attention are taken care off and followed up on.
- Liaise with the Galley Supervisors regarding par levels and counts of china and requisition where necessary.
- Conduct regular operational and sanitation inspections of all kitchen areas.
- Ensure garbage separation standards are enforced throughout the kitchen.
- Assist in the execution of any special menus as directed by the chef.
- Attend all boat and fire drills as required by ships command.
- To perform duties that may be necessary, and as directed by the management.
- To maintain Hospitality standards at all times towards Crew and Guests.
Qualifications and competence:
- Fluency in conversational & written English,
- Candidates should have a positive attitude and be self self-motivated.
- Ability to motivate, train and supervise workforce.
- A Diploma / Degree in Hospitality or Food production is preferred but not required.
- A minimum of 2-years experience in a hotel/restaurant (minimum of 4-star rating) serving contemporary continental cuisine/fusion with extensive significant banqueting capability in a capacity of CDP or similar.
- Previous Cruise ship experience is preferred.
- Basic computer skills (MS office) are advantageous but not essential.
- At least 21 years old.
