We are seeking an experienced and passionate Chef Tournant to join the Food Production team onboard. This is an exciting opportunity for a skilled culinary professional with strong leadership abilities and a passion for delivering high-quality cuisine in a fast-paced, multicultural environment.
As Chef Tournant, you will be responsible for supporting and supervising culinary operations across multiple kitchen sections while ensuring the highest standards of food quality, presentation, hygiene, and efficiency.
Responsibilities and Tasks:
- Supervising, coaching, and supporting junior kitchen team members
- Preparing and executing company recipes with consistency, accuracy, and high quality
- Working across all kitchen sections as needed, including sauce, fish, roast, cold kitchen, and other main production areas
- Coordinating daily operations within your assigned section and delegating tasks effectively
- Monitoring food production levels and identifying opportunities for improvement and cost control
- Preparing daily food requisitions and checking deliveries for accuracy
- Ensuring compliance with all public health, sanitation, and HACCP standards
- Maintaining readiness for internal and external public health inspections
- Reviewing recipes daily and ensuring recipe folders are kept updated and organized
- Supporting operational excellence through strong planning, organization, and team supervision
Qualifications and competence:
- Minimum 5 years of experience in an upscale hotel, resort, cruise ship, or convention banqueting operation
- At least 2 years of experience as a Chef Tournant
- Previous shipboard experience is preferred
- Culinary school degree required
- Strong food knowledge and understanding of professional culinary terminology
- Excellent communication, leadership, decision-making, and interpersonal skills
- Strong organizational, coaching, and staff management abilities
- Good computer skills
- Understanding of basic accounting and cost control principles
- Ability to write reports and maintain effective communication with senior officers and corporate teams
Language Requirement:
All candidates must be able to communicate effectively in English, both written and spoken, in order to follow procedures, provide instructions, and interact professionally with guests, supervisors, and colleagues.
Physical Requirements
- Candidates must be physically fit for shipboard life and able to:
- Participate in emergency drills and safety procedures
- Lift and/or move up to 50 pounds
- Stand and walk for extended periods
- Work in a dynamic environment with varying travel and accommodation conditions
