OSM Thome Recruitment is seeking a talented and passionate Head Baker to lead Royal Caribbean's Group onboard bakery operations and deliver exceptional artisan baked goods across our luxury fleet. This is an exciting opportunity to showcase your creativity and expertise while contributing to a world-class culinary experience for our guests.
Responsibilities and Tasks:
- Lead daily bakery production across all onboard dining venues, in-suite dining, crew areas, and special events.
- Prepare a wide range of premium baked goods, including artisan breads, viennoiserie, laminated pastries, gluten-free products, and specialty items.
- Ensure consistently high standards of quality, presentation, and guest satisfaction.
- Collaborate with the Executive Chef, Pastry Chef, and corporate culinary teams to develop and execute bakery offerings.
- Maintain compliance with USPH, HACCP, and company food safety standards.
- Manage bakery inventory, production planning, and waste control.
- Train, mentor, and supervise bakery team members.
- Support culinary demonstrations and guest engagement activities when required.
Qualifications and competence:
- Valid STCW certification.
- Proven experience as a Head Baker, Senior Baker, or similar leadership role within luxury hotels, fine-dining establishments, or cruise ships.
- Strong expertise in artisan bread production, laminated doughs, and specialty dietary baking.
- Culinary qualification or certification preferred.
- Cruise ship experience is an advantage.
- Physically and medically fit for sea service.
- Strong leadership, organizational, and communication skills.
- Knowledge of USPH, HACCP, and food safety requirements.
- Ability to deliver exceptional quality while maintaining cost control.
- Fluent English, both written and spoken.
- Additional languages are considered an advantage.
- Proficiency in Microsoft Office applications, Fidelio, and MXP is preferred.
