Supervises and coordinates activities of a particular workstation engaged in preparing and cooking food products for various outlets per instruction of the direct supervisor onboard. Responsibilities and Tasks:

  • Oversee and supervise food preparation and production across assigned sections including Main Galley, Windjammer, Room Service, Specialty Restaurants, Cold Kitchen, and more.
  • Prepare dishes in accordance with standardized corporate recipes and ensure consistent quality, taste, and presentation.
  • Lead a team of junior cooks and chefs by providing coaching, mentoring, and performance evaluations.
  • Conduct daily recipe reviews, assign and coordinate tasks, and manage workstation organization to ensure speed and efficiency.
  • Maintain strict food safety and sanitation standards (HACCP, USPH, Anvisa, Shipsan, Canadian, and Australian).
  • Manage requisitions, inventories, waste control, and monitor equipment performance; report maintenance needs as necessary.
  • Support ongoing culinary training programs and onboard certification efforts, ensuring all direct reports are prepared and compliant.
  • Participate in public health inspections and internal audits by ensuring cleanliness, documentation, and procedural adherence.
  • Collaborate with Sous Chef and Executive Chef to meet food cost targets, implement operational improvements, and develop staff.
  • Maintain high standards of personal grooming, hygiene, and workplace safety in alignment with company policies.


Qualifications and competence:

  • Culinary degree or equivalent certification required.
  • Minimum 6–8 years’ experience in high-end culinary environments such as upscale hotels, resorts, cruise ships, or banqueting services.
  • At least 2 years’ experience as a Chef de Partie in a high-volume kitchen (shipboard experience preferred).
  • Strong leadership, time management, and problem-solving skills with the ability to motivate and develop an international team.
  • Excellent knowledge of culinary techniques including braising, sautéing, broiling, grilling, and advanced knife skills.
  • In-depth understanding of global public health standards and HACCP compliance.
  • Proficient in English (spoken and written); additional languages such as Spanish, French, or German are a plus.
  • Solid computer literacy, including recipe management, requisition systems (e.g., Crunch Time), and intermediate office tools.
  • Familiarity with basic accounting principles is preferred.
  • Ability to collaborate effectively with colleagues, management, and corporate teams in a multicultural, dynamic setting.
