OSM Thome Recruitment is seeking a talented and organized Chef De Partie- Pastry to lead the daily operations of our pastry galley, ensuring the highest quality in dessert preparation, presentation, and compliance with health and safety standards. This role is responsible for supervising the pastry team, managing inventory and cost control, and maintaining USPH compliance at all times.
Responsibilities and Tasks:
- Oversees the daily operations of the pastry galley to ensure smooth, efficient production in line with company standards and safety policies.
- Directs, supervises, coaches, and evaluates pastry team members in collaboration with the Assistant Pastry Chef.
- Ensures the quality, consistency, and presentation of all pastry and dessert items served across the vessel.
- Prepares production forecasts, monitors leftovers, and controls waste to maintain food cost targets.
- Supervises the setup and replenishment of dessert displays and buffet presentations.
- Ensures full compliance with USPH and HACCP regulations in all pastry areas at all times.
- Maintains a clean and sanitized work environment and ensures cleaning schedules are followed by the team after every service.
- Prepares for announced and unannounced inspections by ensuring readiness and adherence to all public health standards.
- Coordinates the requisitioning and transportation of ingredients and supplies from the main stores to the pastry galley.
- Ensures all recipes and production yields meet corporate culinary standards and specifications.
- Assists with the completion of daily pastry consumption recaps and other operational reporting tasks.
- Monitors team punctuality, grooming, uniform standards, and hygiene, especially for those working in guest-facing areas.
- Maintains knowledge of timekeeping, scheduling systems, and documentation in line with crew contracts and compliance requirements.
- Supports guest and crew inquiries by understanding and following shipboard operational procedures.
- Attends all required meetings, training sessions, and work-related activities as scheduled.
- Coaches and trains pastry cooks regularly, ensuring development and performance alignment with company expectations.
- Ensures all required documentation and reports are accurately prepared and submitted on time.
- Controls costs by monitoring supply usage, preventing waste, and ensuring efficient storage and handling practices.
- Reviews and verifies team timesheets, forwarding them to the Executive Sous Chef Pastry & Bakery for approval.
- Conducts spot checks of workstations to ensure correct storage methods and adherence to inventory control procedures.
- Performs other related duties as assigned by supervisors or management in support of overall galley operations.
Qualifications and competence:
- Culinary degree from an accredited institution is required.
- Minimum 2 years of experience as a Chef de Partie (Pastry) in an upscale hotel, resort, cruise ship, or high-volume banquet setting (shipboard experience preferred).
- Proven leadership and management skills in a multicultural, fast-paced kitchen environment.
- Strong communication, problem-solving, and decision-making abilities.
- Excellent customer service mindset with team-building and conflict resolution capabilities.
- Solid understanding of guest service standards, quality control, and service delivery processes.
- Proficient in planning, organizing, coaching, and evaluating team performance.
- Intermediate computer skills and basic accounting knowledge (e.g., debits/credits, adjustments).
- Capable of writing reports and professional correspondence and communicating effectively with senior officers and corporate staff.
- Fluency in English (written and spoken) is required; must be able to follow and deliver instructions clearly.
