Role Overview:
The Assistant Beverage Operations Manager plays a key role in supporting the Beverage Management team through administrative duties and operational oversight. Working closely with the Bar Manager, this person supervises bar staff, ensures high guest satisfaction, and works toward improving profitability and reducing complaints. A critical responsibility includes managing the ship’s beverage cost systems and ensuring adherence to cost of sales targets and inventory control protocols.
This role also involves training, auditing, and ensuring compliance with financial and operational standards, including use of systems like Accubar, Crunch Time, and InfoGenesis. The role supports inventory initiatives, tracks excess/obsolete items, and ensures that key performance indicators (KPIs) related to cost-efficiency are met.
Key Qualifications:
- At least 5 years of progressive experience in food & beverage in upscale or high-volume settings (shipboard preferred).
- Bachelor’s degree in hospitality, business, or a related field (or international equivalent).
- Strong analytical, numerical, and computer skills, including MS Office and POS systems.
- Understanding of USPH regulations, organizational planning, service excellence, and HR practices.
Operational Responsibilities:
- Ensure compliance with safety and environmental standards.
- Welcome and orient new bar staff onboard.
- Prepare voyage, turnaround, and emergency reports.
- Oversee POS systems and bar inventory, ensuring appropriate stock levels.
- Lead promotional activities (wine tastings, mixology classes, etc.).
- Proactively manage guest satisfaction and feedback.
- Monitor and control costs, reduce waste, and ensure all charges are properly recorded.
- Generate daily cost/revenue reports and conduct regular audits.
- Lead training on accurate pouring and loss prevention.
- Collaborate with inventory and housekeeping departments for stock checks and minibar audits.
- Assist with customs declarations and tax reporting.
Leadership Responsibilities:

- Ensure the team understands and delivers brand standards.
- Serve as a role model and brand ambassador.
- Develop talent through mentoring, feedback, and succession planning.
Physical & Language Requirements:
- Must be able to stand for long periods, lift up to 50 lbs, and meet emergency drill participation requirements.
- Strong English communication skills (written and spoken) are essential for safety and service delivery.
