Onboard – Restaurant Operations

Be the face of refined coastal dining

As Head Waiter, you are a visible leader in the restaurant and a key contributor to the Hurtigruten Signature guest experience onboard MS Finnmarken. You report to the Executive Restaurant Manager and are responsible for daily service execution, team leadership, and development of waiter apprentices.

This role requires strong service competence, natural authority, and a genuine passion for guest interaction, storytelling, and quality.


Key Responsibilities:

Restaurant Operations:

• Lead restaurant service during all meal periods, ensuring smooth flow and high-quality execution

• Work actively in service with own station and support the team when required

• Ensure correct table allocation, guest flow, and handling of special requests and dietary needs

• Cooperate closely with the Chef to ensure correct timing, presentation, and delivery of meals


Guest Experience & Storytelling:

• Ensure full implementation of Norway Coastal Kitchen in daily restaurant service

• Conduct daily briefings covering menus, allergens, wine pairings, and storytelling themes

• Ensure waiters communicate product origin, local suppliers, and sustainability aspects to guests

• Deliver personalised and professional guest experiences aligned with Signature standards


Leadership & Training:

• Lead, coach, and motivate waiters and waiter apprentices

• Be responsible for onboarding and training of new restaurant staff

• Act as professional supervisor and training manager for waiter apprentices

• Conduct regular staff meetings and provide structured feedback and follow-up


Planning, Compliance & Safety:

• Prepare duty rosters and ensure compliance with working and rest hour regulations

• Ensure compliance with SOPs, IK-Mat, IK-Alcohol, and alcohol legislation

• Promote safety awareness and ensure correct reporting of deviations


Qualifications:

• Minimum 3–5 years’ experience from high-quality restaurant service

• Proven experience in a supervisory or senior service role

• Strong knowledge of food service, wine pairing, and guest handling

• Confident communicator with strong presence on the floor

• Fluent English and conversational German are required

• Scandinavian language skills are an advantage

• Structured, calm, and guest-oriented approach

• All employees must have Basic safety course for seafarers STCW AV/1-1, 1-2, 1-1, 1-4, Crowd and Crises management course STCW AV/2, and approved health certificate from authorized seafarer doctor. There is no requirement to have completed the courses before applying, but you must be willing to take them
